Meal prepping can be daunting and if you're anything like me, sometimes I don't want to eat the same meal every day of the week so instead of meal prepping my entrees, instead I like to meal prep healthy snacks so that I have quick and easy things to grab on the go and one less thing I have to "prepare".
This year I want to be more intentional about cutting out processed foods and eating more nourishing, whole food snacks so today I'm giving you some inspiration with 4 easy and healthy meal prep snacks. Blueberry Overnight Oats:
1/2 cup rolled oats
1 cup almond milk
1.5 cups blueberries
1 Tbs chia seeds
1-2 Tbs honey
splash of vanilla
pinch of salt
Pour oats into a jar. Blend almond milk and 1 cup blueberries in a blender until smooth. Pour blueberry milk over oats and add chia seeds, honey, vanilla and salt. Top with more blueberries and shake with the lid on to combine. Refrigerate overnight and enjoy!
Strawberry Overnight Oats:
1/2 cup rolled oats
1 cup almond milk
1.5 cups strawberries
1 Tbs chia seeds
1-2 Tbs honey
1 Tbs ground flax seeds
splash of vanilla
pinch of salt
Pour oats into a jar. Blend almond milk and 1 cup strawberries in a blender until smooth. Pour strawberry milk over oats and add chia seeds, honey, flax seed vanilla and salt. Top with more chopped strawberries and shake with the lid on to combine. Refrigerate overnight and enjoy!
Peanut Butter Banana Overnight Oats:
1/2 cup rolled oats
1 cup almond milk
1 fresh banana
2 Tbs peanut powder
1 tsp cinnamon
1 Tbs chia seeds
pinch of salt
Pour oats into a jar. Blend almond milk and 3/4 of a fresh banana, peanut powder and cinnamon in a blender until smooth. Pour banana milk over oats and add chia seeds and salt. Top with remaining chopped banana and shake with the lid on to combine. Refrigerate overnight. Top with more peanut butter and enjoy!
Chocolate Peanut Butter Overnight Oats
1/2 cup rolled oats
1 cup almond milk
1Tbs ground flax seed
2 Tbs peanut powder
1 Tbs cocoa powder
1 Tbs chia seeds
pinch of salt
Pour everything into a jar and shake with the lid on to combine. Refrigerate overnight. Top with more peanut butter and enjoy!
