FESTIVE GRANOLA RECIPE
3 cups Oats
1 cup Almonds
1 cup Pecans
1 tbsp Cinnamon
1 tsp Ginger
1 tsp Cloves
Pinch Salt
1/4 cup Coconut oil
1 Orange - juice + zest
1 tsp Vanilla extract
1/4 cup Maple syrup
1/4 cup Coconut sugar
1 cup sultanas

Preheat oven to 170C
1. in a large bowl mix together the oats, nuts, spices and season with a pinch of salt.
2. Melt the coconut oil and pour into the bowl with the maple syrup, coconut sugar, orange juice and zest, and vanilla extract. Leave the sultanas out for now.
3. Mix together well, and pour into a baking tray. Bake the granola for 25 minutes, stirring the mixture every 5-10 minutes to prevent the top from burning.
4. Now stir in the sultanas, and bake for a further 5 minutes.
5. Allow to cool completely before transferring into a jar.
