Why don't we observe the harvest of unleavened bread and the harvest of first fruits according to Exodus 33?
The first reason is that the law was given to the Jews (Israelites), not to Gentiles (non-Israelites).
The bigger reason is that Jesus Christ fulfilled the law. Jesus said He came not to destroy the law or the prophets but to fulfill them.
The law served as a "tutor" or "school master" to show people their inadequacy and point them to Christ.
Christ is the "end of the law for righteousness" for everyone who believes in Him.
The Old Testament ceremonies, sacrifices, and laws were types and shadows—prototypes or reflections—of what Christ would actually accomplish.
Jesus fulfilled the ceremonial law of the unleavened bread feast, which commemorated the Passover. Jesus is called the Passover Lamb.
The book of Hebrews shows that Jesus is "better" than the law, the sacrifices, the priesthood, and Moses.
The new covenant in Christ has made the old covenant "obsolete".
While ceremonial and sacrificial laws are fulfilled in Christ, believers are still bound to the moral law, which is summarized by loving God and loving one's neighbor.
