BBQ Kaleji
Recipe in English:
Ingredients:
-Kaleji (Mutton liver) ½ kg
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Lal mirch powder (Red chili powder) 1 tbs or to taste
-Garam masala powder ½ tsp
-Kali mirch powder (Black pepper powder) 1 & ½ tsp
-Lal mirch (Red chili) crushed ½ tsp
-Namak (Salt) 1 tsp or to taste
-Oil 2 tbs
-Koyla (Charcoal)
Directions:
-In bowl,add mutton liver,ginger garlic paste,cumin powder,red chili powder,garam masala powder, black pepper powder,red chili crushed,salt and oil,mix well and marinate for 2-3 hours.
-Stew marinated mutton liver pieces on skewers.
-Put skewers on bbq grill/pan fry until done (all sides) and basting with oil.

Ajza:
-Kaleji (Mutton liver) ½ kg

-Lal mirch powder (Red chili powder) 1 tbs or to taste
-Garam masala powder ½ tsp
-Kali mirch powder (Black pepper powder) 1 & ½ tsp
-Lal mirch (Red chili) crushed ½ tsp
-Namak (Salt) 1 tsp or to taste
-Oil 2 tbs
-Koyla (Charcoal)
Directions:
-Bowl mein kaleji,adrak lehsan paste,zeera powder,lal mirch powder,garam masala powder,kali mirch powder,lal mirch crushed,namak aur oil dal ker ache tarhan mix karein aur 2-3 hours kliya marinate ker lein.
-Marinted kaleji pieces ko skewers per laga lein.
-Skewers ko bbq grill/pan fry per paka lein (all sides) aur oil basting ker lein.
Spicy Red Chili Chutney
Recipe in English:
Ingredients:
-Kashmiri lal mirch (Kashmiri red chili) 4 (soak 30 minutes & deseed)
-Sabut lal mirch (Whole red chilies) 8-10
-Lehsan (Garlic) cloves 10-12
-Imli ka gooda (Tamarind pulp) ½ Cup
-Namak (Salt) ½ tsp or to taste
-Pani (Water) 2 tbs or as required
-Oil 2 tbs
Directions:
-In blender,add kashmiri red chilies,whole red chilies,garlic,tamarind pulp,salt and blend well.
-Add water and blend again.
-Add oil and mix well.
