Recipe for Italian Swiss Chard and Chickpeas
Ingredients:
1 Bunch of Swiss Chard
1 Can Chickpeas
1 Carrot
1 Shallot
3 Garlic Cloves
4 Tbsp Olive Oil
1/4 tsp Red Pepper Flakes
3 Tbsp Water
Dash of Paprika
1/2 Lemon Zest + Juice
Steps:
1. Rinse 1 bunch Swiss chard, trim rough ends, and separate leaves from stems by slicing along both sides of each stem.
2. Slice stems into ½-inch pieces. Stack, roll, and slice leaves into ½-inch ribbons.
3. Peel and cut 1 carrot into small cubes by slicing lengthwise into planks and then chopping.
4. Slice 1 large shallot into ¼-inch half-moons and roughly chop 3 smashed garlic cloves.
5. Heat 2 Tbsp olive oil in a large skillet over medium heat. Sauté Swiss chard stems and carrots with a pinch of salt for 5 minutes.
6. Add shallots with another pinch of salt, cook until softened.
7. Push veggies aside, add 1 Tbsp olive oil, then garlic and ¼ tsp crushed red pepper flakes (optional). Cook garlic until lightly golden, then mix all veggies.
8. Add Swiss chard leaves and a pinch of salt. Stir and cook until leaves begin to wilt.
9. Add 3 Tbsp water, cover, and steam greens on medium-low heat for 2–3 minutes until tender.
10. Remove lid, stir in drained chickpeas, drizzle with olive oil, season with salt and paprika, and cook 5 minutes to heat through.
11. Remove from heat, stir in zest and juice of ½ lemon, then serve. Optionally top with Parmesan and extra lemon.
