🥒Lacto-fermentation is an amazing method of food preservation dating back thousands of years. Sauerkraut, kimchi, yogurt, and various other pickles are all examples of lacto-fermented foods. Rich in probiotics that support gut microbiome as well as prebiotics, which feed beneficial gut bacteria, they are delicious, with a distinct tangy taste and a satisfying crunch (in veggies).
🥒Fermentation is a simple process that relies on a salt brine to create an environment where beneficial bacteria can flourish with no contact with oxygen to prevent unwanted mold growth. What happens is, lactic acid bacteria naturally present on the vegetable surface (or added as a starter culture in case of dairy) begin to convert the food’s carbohydrates into lactic acid, creating a sour taste and lowering the food’s ph, naturally preserving it for an extended time.
🥒You can ferment virtually any vegetable right at home. Today, I’m sharing with you my mom’s recipe for Quick Fermented Pickles, a food far superior to vinegar pickles!
🥒All you need are organic cucumbers, salt, water, honey, garlic, bay leaf, optional flavor boosters like dill flowers, horseradish and cherry tree leaves, mason jars, 2-4 days in a warm environment, and room in the refrigerator to store.
