Ingredients
1 lb elbow macaroni
4 cups milk
4 tbsp butter
4 tbsp flour
2 cups shredded cheddar cheese
1 ½ cups shredded mozzarella
½ cup grated parmesan
Optional cheeses: 1 cup smoked gouda, gruyere, or colby jack
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika (optional)
Extra cheese for topping
Instructions
Boil Pasta: Cook the macaroni until just tender, then drain.
Make the Roux: Melt butter in a pot, whisk in flour, and cook for 1 minute.
Add Milk: Slowly pour in the milk, whisking until the sauce thickens.
Season: Add salt, pepper, garlic powder, onion powder, and paprika.
Melt the Cheeses: Stir in cheddar, mozzarella, parmesan, and any optional cheeses until smooth.
Combine: Pour the cheese sauce over the cooked pasta and mix well.
Bake: Transfer to a baking dish, top with more cheese, and bake at 375°F for 25 minutes.
Serve: Let it rest a few minutes, then dig in!
