My Favourite Food from Prague | Roasted Czech Duck | with Bread + Potato Dumplings

I'm exploring Czech Cuisine once again today, and I'm cooking my favourite food from Prague, roasted Czech duck with Bread + Potato Dumplings and sweet red cabbage and sauerkraut. This is hearty, rustic, and full on flavour food, with no apologies for it's large portions; perfect for the cold winters that the Czech Republic get. Roasted Duck 
  ➤  50g lard
  ➤  Caraway seeds  
  ➤  2 duck legs

Potato Dumplings
➤ 2 large potatoes, mashed 
➤  220g plain flour  
➤  2 eggs  

Sweet Red Cabbage  
➤  2 medium onions, finely chopped  
➤  1 small red cabbage, finely chopped  
➤  2 tablespoons raw sugar  
➤  2 tablespoons white vinegar  
➤  1 tablespoon caraway seeds  
➤  A pinch of salt
