Ingredients:
2 cups makhana (fox nuts / lotus seeds)
3/4 cup grated jaggery (gur)
1 tablespoons ghee
1 tablespoon water
Method:
1. Roast the makhana:
Heat 1 tsp ghee in a pan.
Add makhana and roast on low flame for 7–8 minutes.
Stir constantly till they turn light golden and crunchy.
Remove and keep aside.
2.Make jaggery caramel:
In the same pan, add ½ cup jaggery, 1 tbsp water, and ½ tbsp ghee.
Heat on low flame — let the jaggery melt and bubble slightly.
Check consistency: drop a little in cold water; if it forms a soft ball, it’s ready.
3. Mix everything:
Add the roasted makhana quickly into the hot jaggery syrup.
Add ½ tbsp ghee again — this helps coat evenly and adds shine.
Stir well so every makhana gets coated with jaggery.
4. Cool & Store:
Spread makhana on a greased plate.
Let it cool for 10–15 minutes — they’ll turn crisp and non-sticky.
Store in an airtight jar (stays good for 2–3 weeks).
