Ingredients:
4 lb corned beef brisket
2 onions, peeled and quartered
4 garlic cloves, peeled
1 head green cabbage, cut into 4–8 wedges
10 medium potatoes, whole
8 medium carrots, peeled and halved
1 ½ tsp salt
1 tsp pepper
Instructions:
1. Place corned beef brisket, onions, and garlic in a large pot.
2. Cover with water (enough to later cover vegetables as well).
3. Bring to a low boil and cook for 2 hours.
4. Add cabbage, potatoes, and carrots. Add more water if needed to cover.
5. Return to a low boil and cook 1 more hour, until vegetables are tender.
