Badam Barfi (பாதாம் பர்ஃபி) recipe
Gokulashtami Special
Ingredients:
Badam – 2 cups,
1 cup = 250 ml = 1.25 tumbler
Sugar – 2.5 cups,
Coconut – 4 tbs,
Ghee – 4 tbs,
Elaichi Powder – 1 tsp
Grind coconut in mixie-
1 or 2 pulses only
Coconut grating must be white.
Just 1 or 2 pulses in mixie – Should look like desiccated coconut.
Butter paper in a tray. Grease with ghee.
Saute Badam in a kadai.
Gas medium. “Hand-bearable” temperature.
Do not soak Badam. Use Badam with skin, for great flavour.
Gas off.
Grind Badam into a nice powder.
Sugar – 2.5 cup. Water – 2 cup.
Single string consistency.
Keasari Powder- 1 or 2 pinches (Optional)
In 5 minutes, single string consistency.
Look at the string now.
Gas medium.
Add Badam Powder.
Add Coconut.
Ghee – 2 tbs now. 2 tbs later on.
Keep stirring continuously.
It will take 4 to 5 minutes.
After 3 minutes, add elaichi powder – 1 tsp and ghee – 1 tbs.
Keep stirring.
It will take 4 to 5 minutes.
It forms mild crystals now.
After 4 minutes, add Ghee – 1tbs. Total ghee - 4 tbs.
On the edges you can see mild crystals now
In another 15 seconds switch off gas.
Should not stick to Kadai.
Should become a thick paste.
Right moment. Switch off gas.
Pour into a tray.
Cool for 30 minutes.
Remove butter paper.
Cut into pieces (cakes).
Badam Barfi ready.
We got 54 pieces, for this quantity.
