Juicy Pork Meatballs in Creamy Sauce with Mashed Potatoes
Ingredients:
For the meatballs:
• 2 lb (900 g) ground pork
• 2 slices white bread
• 1/2 cup (120 ml) milk
• 1 medium onion, finely grated
• 2 eggs
• 2–3 small garlic cloves, minced
• Salt
• Black pepper
• Paprika
• Olive oil
For the creamy sauce:
• 16 fl oz (473 ml) heavy cream or half & half
• 1 tbsp (15 g) Dijon mustard
• Universal seasoning
For the mashed potatoes:
• Potatoes, washed and peeled
• Half & half, as needed (start with about 1 cup / 240 ml)
• Universal seasoning, to taste
Instructions:
1. Soak the bread in the milk for a few minutes.
2. In a large bowl, combine ground pork, soaked bread, grated onion, eggs, garlic, salt, pepper, and paprika.
3. Gently mix until just combined—do not overwork the mixture.
4. Set aside while preparing the potatoes.
5. Boil the peeled potatoes in salted water until fork-tender.
6. Drain and add half & half.
7. Season with universal seasoning.
8. Blend with a hand blender for a smooth result, or mash with a potato masher for a chunkier texture.
9. Cover to keep warm.
10. Form meatballs using damp hands or a scoop.
11. Heat olive oil in a large skillet.
12. Brown the meatballs in batches on all sides.
13. Once browned, return all meatballs to the skillet.
14. Add the cream and Dijon mustard.
15. Bring to a gentle simmer and season with universal seasoning to taste.
16. Cover and cook for a few minutes until the meatballs are fully cooked through.
17. Garnish with chopped chives if desired and serve hot with the mashed potatoes.
