How to cook eggplant as an easy stovetop dish. Robust flavors of garlic and oregano elevate eggplant to a whole new level, while quinoa adds texture and body to the recipe. Maybe your new favorite veggie main or side dish? Enjoy!
Mediterranean Eggplant Sauté
Recipe recap:
3-4 Cups Eggplant, cut in 1/2 inch dice
1 C Quinoa, cooked
2 Garlic Cloves, finely minced
2 Tbsp Tomato Paste
2 tsp Dried Oregano
1 Lemon
Salt and Pepper
Olive oil
Saute diced eggplant in 3 tablespoons of olive oil on a low heat in a large pan. Season with salt and pepper, and cook for 10-12 minutes. Add garlic, oregano, and tomato paste. Add quinoa and cook until tomato paste browns on the bottom of the pan. Remove pan from heat, and add the juice of one lemon. Scrape all of the brown bits from the bottom of the pan. Enjoy!
