Ingredients:
For curry:
Oil, 1 Tbsp
Butter, 2 Tbsp
Bay leaf, 1
Cinnamon, ½ inch
Black cardamom, 1
Clove, 4
Green cardamom, 2
Javitree, ½ Tsp
Jaiphal, smallest piece
Cumin (shahi), 1 Tsp
Onion (chopped), 1 Big
Green chilli (cut), 1
Garlic (grated), 5
Ginger (chopped), 1 inch
Turmeric powder, ½ Tsp
Red chilli powder, 1 Tsp
Coriander powder, 1 Tsp
Cumin powder, ½ Tsp
Tomatoes (chopped), 2
Salt to taste
Cashew nuts, 12-15
Water, 2 cup
For Kofta:
Cottage cheese (mashed), 250 Gms
Potatoes (boiled & mashed), 4-5
Fresh coriander (chopped)
Ginger (chopped), 2 Tbsp
Green chilli (chopped), 1
Cornflour, 1.5 Tsp
Mix dry fruits (chopped), 2 Tsp
Salt to taste
For frying kofta:
Oil to fry
For Tempering:
Strained curry
Dry fenugreek leaves (powder), 2 Tsp
Sugar, ¼ Tsp
Salt to adjust
Fresh cream, 2-4 Tbsp
Method:
For Curry:
Heat a pan, add oil & butter, let the butter melt, then add bay leaf, cinnamon, black cardamom, clove, green cardamom, javitree, jaiphal, shahi cumin.
Let cumin crackle, then add onion and sauté till they become translucent.
Add green chilli, garlic, ginger, keep stirring and sauté till masala becomes fragrant.
Now let’s add our dry masala, add turmeric powder, red chilli powder, coriander powder, cumin powder, and mix all the masala.
Add tomatoes once onions are transparent, mix and stir.
Add salt to taste, cashew nuts, and cook till cashews are soft and tomatoes are mushy.
Add water and bring to a boil.
Remove from gas and let it cool. Once it is cooled, grind to make a paste.
For Kofta:
In a bowl, add grated cottage cheese, boiled & mashed potatoes, fresh coriander (chopped), ginger (chopped), green chilli (chopped), cornflour, mix dry fruits (chopped), & salt to taste.
Mix all the ingredients and make dough.
Now take small portions of this dough and make oblong shaped kofta.
Keep aside till all the kofta are ready.
In a kadai, add oil to fry and heat on medium flame.
First add one kofta to check if it is fine, then gradually add more & fry them.
Once they turn golden brown, remove from oil and keep aside till further use.
For Curry:
Heat a pan on medium flame, add strained curry mixture and cook for 2-3 minutes.
Add dry fenugreek leaves,mix. Add sugar to balance the taste, adjust salt and bring to a boil.
Finish with fresh cream.
Remove from gas.
This curry is ready to serve.
Tip: Do not add kofta to the curry as they will melt and lose their shape. Instead, place kofta on a platter and pour curry over it.
Garnish with fresh cream and coriander.
Serve hot and enjoy with naan or paratha.
