Hello and welcome to my very first YouTube video! Thank you so much for checking out my channel!
Today I am sharing with you one of my favorite dessert recipes! A healthy vegan butter tart recipe that is also gluten free and refined sugar free. Luckily, it is also very easy and quick to prepare so if your craving something sweet, this is definitely a go to!
For this recipe you will need the following ingredients:
CRUST INGREDIENTS
~ 6 TBSP White Rice Flour
~ 2 TBSP Cashew Butter
~ 2 TBSP Maple Syrup
~ 1 TSP Vanilla Extract
~ Pinch of Himalayan Salt
FILLING INGREDIENTS
~ Optional - Dried Fruit & Nuts (I used 1.5 TBSP Chopped Pecans and 1.5 TBSP of Raisins)
~ 5 TBSP & 2.5 TSP Maple Syrup
~1/3 CUP Coconut Cream
** NOTE ** Chill a can of Full Fat Coconut Milk Overnight and scoop out the cream the next day when you are ready to make the Butter Tarts. You may also use Coconut Cream from a can however the best result is if you make it yourself!
~ 1 TSP Vanilla Extract
~ Pinch of Himalayan Salt
How to Make the Vegan Butter Tarts:
STEP ONE
Preheat your oven to 350F degree's. Grease up a 6 cup Muffin Pan (I used Grape Seed Oil) and set aside.
STEP TWO
Create the Crust by combining all the crust ingredients into a food processor. Combine until you are able to create a ball with your mixture. Divide the mixture in 4-6 parts, depending on your Muffin Pan size (I made 4 Butter Tarts as my Muffin Pan was on the bigger side) and place each part into a muffin cup. Form a crust along the bottom and the walls of the tray by pressing down on the crust.
STEP THREE
Optional - Sprinkle the dried fruits and/or nuts into each crust form. I used pecans and raisins. Set aside.
STEP FOUR
Create the Filling by combing all the Filling Ingredients (Except for the optional dried fruits and nuts) into a food processor. Process until smooth. Note: your filling will be very liquid, however it will thicken once it is baked.
STEP FIVE
If your filling is cool/cold you will need to slightly heat up the mixture. Transfer the filling into a glass bowl and place the bowl into a half-filled (Bigger) bowl filled with hot water for a few minute (Stir Occasionally).
Once the filling is slightly warmed, divide the mixture between the cups.
STEP SIX
Bake in the preheat oven for 30-35 minutes. Once ready, you can either enjoy them cooled or hot.
