PART 1. Basque
Cream Cheese 250g
Granulated Sugar 50g
Eggs 2
Concentrated Coffee Liquid 10g
Whipping Cream 170g
Corn Starch 8g
PART 2. Tiramisu
Mascarpone 110g
Egg Yolks 20g
Granulated Sugar 30g
Gelatin Sheets 5g
Whipping Cream 160g
Coffee - flavored Liqueur 10g
Cocoa Powder (as needed)
Steps:
1 Softened cream cheese at room temperature,add granulated sugar mix well.
2 Add the eggs in batches and mix well,then add the whipping cream and coffee liquid mix until smooth.
3 Add corn starch and mix well, then pour into the mold,bake at 220°C for 25 minutes with both top and bottom heat.
4 Mix egg yolks and granulated sugar, and heat them over water above 65°C,then add gelatin sheets mix well.
5 Add the mascarpone and egg yolk mixture to the container and mix well, then add the coffee liqueur and stir until smooth.
6 Add the whipping cream (whip to 60% stiff)in batches to the egg mixture and stir gently.
7 Pour it over the cooled Basque and refrigerate for more than 4 hours,demold and sift cocoa powder for decoration.
