Rustic Potato Salad:
Rustic potato salad is a hearty, wholesome dish that celebrates simple, fresh ingredients. It typically features tender, unpeeled potatoes for a natural texture, combined with creamy or tangy dressings like mayonnaise, mustard, or vinaigrette. Often mixed with fresh herbs and sometimes bacon or hard-boiled eggs, this salad is bursting with flavour and rustic charm. Perfect for picnics, barbecues, or family dinners, rustic potato salad is a comforting side dish that feels both traditional and timeless.

Rustic Potato Salad:
Serves 4
Ingredients:
500g baby white potatoes
2 eggs
1 bacon rasher
1 onion, diced
3 spring onions
2 tablespoons olive oil
½ lemon, juiced
½ tablespoon Dijon mustard
½ cup mayonnaise
Parsley, diced
Method:
1. Place the eggs in a saucepan of cold water. Place the pan over medium heat. Bring to a gentle simmer for 5 minutes (semi-firm yoke and hard whites)
2. Remove from heat and cool then peel.
3. Place a tablespoon of olive oil in a frying pan over a medium heat and cook the bacon and onion, remove from heat and set aside.
4. Place the baby potatoes in a saucepan of cold water, bring to the boil over high heat , reduce heat to medium and cook for 10 minutes or until potatoes are tender. Drain and place in the bowl, cutting in half, adding the lemon juice and olive oil while still warm.
5. Add bacon and onion, dijon mustard, mayonnaise, spring onions and mix to combine, add chopped eggs and chopped parsley and gently fold through.
6. Sprinkle with additional parsley.

Styling Tip: Serve rustic potato salad in a large, shallow bowl or a rustic wooden dish to emphasize its hearty charm. Garnish with freshly chopped herbs like parsley, dill, or chives, and a sprinkle of cracked black pepper for added color and texture.
