Ingredients
1. King oyster mushrooms
2. Eggs
3. Leftover rice
4. Green onions
5. Salt

Cooking
1. Dice the king oyster mushrooms into small, ear-shaped pieces.
2. Finely chop the king oyster mushrooms.
3. Finely chop the green onions.
To emphasize the flavor of the mushrooms,
finely chop the green onions so that they only provide color.
4. After breaking the eggs, season with an appropriate amount of salt.
5. Heat a wok, add the king oyster mushrooms cut into ear-shaped pieces,
and stir-fry without oil. When the volume decreases and the surface
turns brown, take it out and set it aside.
Stir-frying over high heat removes moisture from the surface
and preserves the mushroom juice inside, increasing the chewy texture.
6. Heat the wok and add lard.
7. Add 1/3 of the diced king oyster mushrooms and stir-fry.
8. When the king oyster mushrooms become aromatic
and take on a golden-brown hue, transfer them out and reserve.
9. Heat cooking oil and stir-fry the eggs first.

10. When the eggs are half-cooked, add the leftover rice.
11. Spread the rice and eggs evenly in the pan and gently press them down.
12. After the rice grains have fully evaporated their moisture and turned a light golden yellow, turn them over.
13. Add a suitable amount of salt and continue to stir-fry evenly.
*The above process requires patience and careful heat control.
Stir-frying for a long time without burning is essential to fully bring out
the aroma of the eggs and create a looser, more layered texture for the rice.
14. Stir-fry with the pre-cooked king oyster mushrooms.
15. Add 1/3 of the chopped king oyster mushrooms and stir-fry evenly.
This fried rice is not made by combining all ingredients at once.
The mushrooms are cooked in stages so they can be experienced in multiple states.
In a dry pan, moisture is driven off to build texture;
then they are paired with butter and lard to deepen aroma;
finally, fresh mushrooms are added in residual heat to preserve their natural brightness.
Mushrooms shaped through different cooking phases
create layers of texture and aroma within a single plate,
ultimately converging into one deep, unified mushroom flavor.

but about fully drawing out the inherent potential of the mushrooms.
16. After turning off the heat, add the remaining 1/3 of the chopped
king oyster mushrooms, butter, and white pepper powder, and stir-fry evenly.
17. Finally, add the finely chopped green onions and stir-fry evenly.
18. Add 2–3 drops of white wine vinegar at the end to sharpen
and define the umami of the king oyster mushrooms.
19. Done.
