🍪 INGREDIENTS
2/3 cup pistachio cream
2/3 cup toasted kataifi
1/2 cup butter
1/4 cup cocoa powder
1 tbsp avocado oil
1/2 cup granulated sugar
1/3 cup brown sugar
1 large egg
3/4 tsp vanilla extract
1 3/4 cups cake flour
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1/3 cup semisweet chocolate
2 tbsp pistachios
👩🍳 HOW TO MAKE DUBAI CHOCOLATE COOKIES
Prepare the pistachio filling by mixing chopped katifi pastry with pistachio cream. Scoop into small portions and freeze until firm.
Melt the butter, then stir in cocoa powder and avocado oil. Allow the mixture to cool so it doesn’t cook the egg.
Mix in the sugars, vanilla extract, and egg until smooth.
Add flour, baking soda, baking powder, and salt. Mix just until combined.
Scoop cookie dough, flatten slightly, and wrap around the frozen pistachio filling, sealing completely.
Bake at 350˚F until the cookies are set but still soft, about 10 minutes.
Allow cookies to cool completely.
Drizzle with melted chocolate and finish with chopped pistachios.
