Restaurant Style Mexican Rice:
4 Roma tomatoes (quartered)
1 White onion (quartered)
1/3 cup vegetable oil
2 cups long grain rice
4 cloves of garlic (minced)
2 jalapeno peppers (minced) add more for more heat
2 cups of chicken broth or vegetable to make the recipe vegan
1 TB of tomato paste
1 1/2 TS of salt
pepper
1/2 cup of chopped cilantro
1 lime
Directions:
Preheat oven to 350 degrees. In a food processor or blender add your roma tomatoes & onion & puree. You will only need 2 cups of this tomato mixture. Heat your oil in a pot and add your rice and saute until golden brown. This will take about 10-15 minutes. Make sure not to burn! Add your garlic, peppers and stir in to blend. Then, add your tomato mixture, broth, paste, & 1 1/2 TS of salt & then bring to a boil. Once it comes to a boil, remove and transfer to a 9x13 dish and cover tightly with foil. Bake for 30 minutes. Once done cooking, take your rice out & fluff with a fork. Fold in your cilantro, add salt/pepper, and lime...ENJOY!
