Ayam Masak Merah
Ingredients:
Chicken
1 tsp turmeric powder
2 onions
2 lemongrass
4 cm lengkuas
1/2 tsp tumeric
1/2 tsp belacan
2 cinnamon stick
3 star Anise
3 cardamom
3 cloves
1 tbsp coriander powder
1 tsp fennel powder
1 tsp cumin powder
1/4 can Tomato puree (Gilda) or 2 tbsp tomato sauce
4 tbsp chillie sauce
Sugar to taste
Salt to taste
Green Peas
Fried shallots
Coriander leaves
Mint leaves
Ingredients: blend
30 dried chillies
2 onions or 20 shallots
5 garlic
5 cm ginger
Method 2
Ayam Masak Merah / Fried Sambal Chicken
Ingredients:
Fried whole chicken - marinate with tumeric, chillie powder and salt
1 cinnamon stick 2 star anise, 4 cloves & 3 cardamoms
1/2 cup chillie paste
1/2 tbsp ginger & garlic paste
4 tbsp chillie Sauce
2 tbsp tomato sauce
Salt & sugar to taste
Coriander leaves
