Chaat from Kolkata is not just famous in our country but worldwide. Kolkata is known for its jhaal moori, chapti channa, chilla and ghugni. But what I love most from all of Kolkata's exports is the humble puchka. Also known in other parts of the country as Panipuri or Golgappa. This is a recipe from my mom's repertoire. She's a fab cook and any food turned out by her is most delish.
Water Ingredients
1 Raw mango, 3 green chillies, 2 tbsp fresh coriander,2 tbsp fresh mint or 1 tsp dry mint powder, 1/2 tsp sugar, less than 1/8 th tsp black pepper powder, 1 tsp roasted cumin powder, 1 tsp black salt, 3/4 th tsp red chilli powder, water, salt to taste.
Method
grind the raw mango with the skin on along with green chillies and fresh mint. Make it into a fine paste. Use water if needed. Add in all the masalas, salts, leaves, sugar. taste and adjust the seasonings. Keep to cool in the refrigerator.
Aloo masala ingredients:
2 large boiled potatoes, 1/3 cup boiled deli chickpea,1 finely chopped green chilli, 2 tbsp fresh coriander,1 tsp lemon juice, 1.5 tbsp tamarind pulp, 1 tsp posted cumin powder, 1/2 tsp red chilli powder, 1 tsp black salt, salt to taste.
Method:
peel and mash the potatoes. mash the chickpeas. add in rest of the ingredients. mix well. taste and adjust the seasonings. keep to cool.
serve with puchka ka paani, aloo masala and the puris.
