🍎 Ingredients For Moules à La Basquaise
• 1 red bell pepper
• 1 green bell pepper
• 1 cup/75 ml olive oil
• 1 small onion, thinly sliced
• 2 garlic cloves, sliced
• 2 cups/450 ml dry white wine
• salt and pepper
• 6 Ib/2.7 kg mussels (ideally rope grown)
• 4 sprigs flat parsley, finely chopped
• toasted baguette to sop up that juice
🫕 Equipment
• baking sheet (for roasting the peppers)
• tongs
• large bowl and some plastic wrap (for peeling the peppers)
• large pot with lid
• warmed serving bowl

🍎 Ingredients For Moules Marinières (with a twist)
• 4 ounces/112 g + 1 Tbsp/14 g reserved unsalted butter
• 1 Tbsp/14 g olive oile
• 2 shallots, thinly sliced
• 2 cups/450 ml dry white wine
• salt and pepper
• 6 Ib/2.7 kg mussels (ideally rope grown)
• 4 sprigs flat parsley, finely chopped
• 1/2 box of spaghetti
• 1 tsp / 2 g red pepper flakes
• 1/2 cup / 44 g grated cheese
🫕 Equipment
• 2 large pots, one lid
• warmed serving bowl
• large strainer
• tongs
• wooden spoon
