Ingredients Required:
Green Chilies, 4/5 slit (skip or reduce to decrease heat)
Peanuts/cashews, a handful
Lemon, 1
Turmeric,1 teaspoon
Curry leaves, one sprig/bunch
Oil, 2tbsp
Mustard seeds, 1 teaspoon
Cumin seeds, 1 teaspoon
Urad daal/Chana dal, 1 teaspoon each
Salt, as per taste
Basmati Rice,1 cup

Steps:
1.Press the 'saute' button and wait for the liner to heat up.Add oil, mustard seeds and cumin seeds. Wait for them to splutter.
2.Add curry leaves and green chilies. Saute for a few minutes
3.Add urad dal and chana dal. Throw in cashews and peanuts. Saute for a few minutes till the cashews turn brownish.
4.Add turmeric and rice. For one cup of rice add two cups of water.
5.Add salt and do a taste test.
6.Seal the Instant pot. Press the 'pressure cook' or 'manual' button and set the timer to 4 minutes.
7.Do a quick release, and once the safety valve is down, carefully open the lid.
8.Fluff the rice with a fork to release excess moisture. Add the lemon juice and let it rest for a few minutes.
