鮮茄燴美國牛肋條:
材料:
急凍美國牛肋條1磅
紅蘿蔔1個(大)
蕃茄2個
處理:
1. 牛肋條,清水解凍15分鐘,擎乾水。
2. 中火在鑊中煲滾1鑊水,加入紹興酒2湯匙,放牛肋條出水。滾起後,倒去水分,清水洗乾淨,擎乾水。
3. 蕃茄,1個開8件。
4. 紅蘿蔔,去皮,洗乾淨,切三角形。
烹調:
1. 牛肋條,白鑊中火烘1分鐘。
2. 加入紅蘿蔔。
3. 加入4粒冰糖。
4. 加入鮑魚汁,1湯匙。
5. 加入滾水,蓋過肉面。
6. 滾起後,轉中慢火,炆20分鐘或以上。
7. 過了20分鐘,牛肋條已炆腍,加入蕃茄,再加入半支茄汁,轉中火,再炆5分鐘。
8. 上碟。
Braised US beef rib finger with tomatoes:
Ingredients:
US beef rib finger 1 lb
Carrot (large) 1 No.
Tomatoes 2 Nos.
Preparation:
1. Beef rib finger, defrost with tap water for 15 minutes. Hang dry.
2. Heat up a wok of water at medium flame. Add Shaoxing wine 2tbsp, then soak beef ribs into water, wait for boiling up. Pour away water after boiling up. Rinse thoroughly and hang dry.
3. Tomatoes, cut a tomato into 8 shares.
4. Carrot, peel, then rinse. Cut into triangular shapes.
Steps:
1. Beef rib, fry in wok with no oil at medium flame for 1 minute.
2. Put carrot pieces.
3. Put rock sugar 4 cubes.
4. Add abalone sauce 1 tbsp.
5. Add boiled~up water, just cover up the beef.
6. Turn to medium~low flame after boils up. Braise for 20 minutes or more.
7. Beef rib finger has been braised well after 20 minutes. Put tomatoes and 1/2 bottle of tomato ketchup. Braise for 5 minutes more after turning to medium flame.
8. Serve.
