Hi there folks, welcome to another episode of Lou's Redo's. Today, I'll show you how to make a meatball marsala with leftover meatballs. Heat a pan with olive oil over medium to high heat, add a tablespoon of chopped shallots and 4-6 ounces of pancetta. Cook them down a little bit and add 1 small to medium basket of mushrooms. After the mushrooms have cooked down slightly, add your meatballs. You can add however many meatballs you want cause remember, theres no rules! Add a cup and a half of chicken stock, 4 ounces of good marsala wine, about 2 tablespoons of roux or flour just to thicken the sauce, and some salt and pepper to taste. Just like that, you have a meatball marsala in just about 10 minutes. You can eat it as is, or you can serve it over egg noodles, any kind of rice, its still delicious. Recipe
1 tablespoon of shallots
4-6 ounces of pancetta

1 1/2 cups of chicken stock
4 ounces of GOOD marsala wine
2 tablespoons of roux or flour (to thicken)

Pink Salt and Black Pepper (to taste)
