🍰Ingredients
For the Base:
200 g cookies (like Digestive or butter biscuits)
150 g white chocolate
50 ml heavy cream
2 tbsp pistachio paste
**For the Raspberry Syrup:
150 g raspberries (fresh or frozen)
2 tbsp sugar
For the Cream Layer:
250 g mascarpone
50 g raspberry syrup
1 packet whipping cream stabilizer (Klopfix or similar)
2 tbsp powdered sugar
1 sachet vanilla sugar
250 ml heavy cream
**For Layering & Decoration:
90 g pistachio paste
35 g raspberry syrup (for lines)
100 g white chocolate
40 ml heavy cream
**Fresh raspberries & chopped pistachios (for topping)

👩🍳 Method
1️⃣ Make the Ganache:
Heat 50 ml cream till almost boiling, add 150 g white chocolate, let rest 1 min, then mix smooth.
2️⃣ Prepare the Base:
Crush cookies, mix with ganache and pistachio paste.
Press into a parchment-lined springform pan — form a rim on the sides.
3️⃣ Raspberry Syrup:
Cook raspberries with sugar for 5–7 min, strain to remove seeds, and let cool.
4️⃣ Cream Filling:
Beat mascarpone, raspberry syrup (50 g), stabilizer, powdered sugar & vanilla sugar.
Add cream gradually and whip till firm.
5️⃣ Assemble Layers:
Spread pistachio paste on the cookie base.
Add half cream, smooth it, drizzle raspberry syrup lines, then add remaining cream.
6️⃣ Top Ganache:
Make new ganache (40 ml cream + 100 g white chocolate).
Pour over cream layer, decorate with dots of raspberry syrup & pistachio paste.
Use a toothpick for marble effect.
7️⃣ Chill:
Refrigerate for at least 6 hours or overnight for perfect texture.
8️⃣ Serve:
Slice neatly using a knife dipped in hot water.
Garnish with fresh raspberries & pistachios.
