Spices such as cumin, coriander, and garam masala are commonly added, along with fried onions, ginger, garlic, and sometimes yogurt.
Here is a basic recipe for beef haleem:
Ingredients:
1 cup cracked wheat
1/2 cup barley
1/2 cup lentils (such as split chickpeas, yellow lentils, or red lentils)
500 grams beef, cut into small pieces
2 onions, finely sliced
1/2 cup yogurt
2 tablespoons ginger-garlic paste
2 teaspoons cumin powder
2 teaspoons coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
4-5 tablespoons oil or ghee
Fresh coriander and mint leaves for garnish
Lemon wedges for serving
Fried onions for garnish
Instructions:
1. **Preparation of Grains and Lentils**: Soak the cracked wheat, barley, and lentils in water for at least 2-3 hours. Drain and set aside.
2. **Cooking the Beef**: In a large pot, heat the oil or ghee. Add the sliced onions and fry until golden brown. Remove half of the fried onions and set aside for garnishing.
3. **Add Spices and Beef**: To the remaining onions in the pot, add the ginger-garlic paste and sauté for a few minutes. Add the beef pieces and cook until browned. Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
4. **Add Yogurt and Cook**: Add the yogurt to the beef mixture and cook for another 5-10 minutes.
5. **Cooking the Haleem**: Add the soaked grains and lentils to the pot with the beef. Add enough water to cover the mixture (about 8-10 cups). Bring to a boil, then reduce the heat and simmer for 3-4 hours, stirring occasionally to prevent sticking. The mixture should become thick and the meat should be very tender.
6. **Blending**: Once the haleem has cooked, you can use a hand blender to blend the mixture to a smooth consistency. Alternatively, you can use a wooden spoon to mash the mixture if you prefer a chunkier texture.
7. **Final Touches**: Add garam masala and adjust salt to taste. Simmer for another 15-20 minutes.
8. **Serving**: Serve hot, garnished with fresh coriander and mint leaves, lemon wedges, fried onions, and a drizzle of ghee or oil if desired.
