Sugar Flower Tutorial: Chocolate Cosmos | Honey Crumb Cake Studio
These chocolate cosmos flowers are dreamy! We love using them in sugar flower arrangements on our cakes whenever we can, and we’re here with a detailed tutorial to help you master them! As always, Carla shares her insider tips and tricks, including TWO different ways to make the flower centers and the petals themselves. Plus, you'll learn how to add realistic color accents using petal dusts.

TOOLS & MATERIALS:
Cornstarch to prevent sticking
Shortening (optional; to condition your gumpaste while kneading it)
Water or edible glue, plus a small paintbrush
Gel colors (I used Americolor Super Red, Chocolate Brown, and Burgundy to create the deep marsala red paste used in the tutorial)
26 g floral wire (white), and floral tape (green or brown)
OPTIONAL: 5-petal rose cutter (I am using the discontinued "Bermuda" cutter from Global Sugar Art, but you could use the small JEM “Easy Rose Cutter”, or a large six-petal daisy cutter instead)
1" wide (or 3/4" wide) teardrop cutter or rose petal cutter
Gumpaste rolling pin, foam pad, and small/medium ball tool
Dresden tool
Fine scissors
White or yellow sewing thread, OR commercially-made yellow flower stamens
Edible pollen (Squires Kitchen brand), OR gelatin granules (or cornmeal / polenta) mixed with golden yellow petal dust to create "pollen"
Corn syrup, honey, piping gel, or egg whites (to glue "pollen" onto cotton thread stamens)
Silk veining tool, OR a dahlia petal veiner, OR multi-purpose flower petal veiner
CelBoard (optional)
Half-sphere silicone mold, apple tray (from grocery store), or any curved flower drying mold that you have on hand
Petal dusts (I used CK Products "Cocoa", Sunflower Sugar Art "Red Wine", and Rolkem "Aubergine")
Small, round, fluffy brush (like an eyeshadow blending brush, reserved specifically for use on your sugar flowers!)
Petal guide:
For individually-wired cosmos flowers, cut 8x petals for each flower
For all-in-one cosmos flowers, cut one petal set (of 6 petals, or however many petals your all-in-one petal cutter has!)
