Maranao Beef Randang. In this video I will show you how I cooked 3 kinds of randang in just one session. I usually do this as I preserve some of it in the freezer and to avoid getting satiated to one flavor. And I prefer cooking randang in a pot but you can also use pressure cooker. Just mix the ingredients altogether and cook as per your cooker’s recommended cooking time.
Maranao randang is adapted from Indonesian/Malaysian randang but it is lighter in taste. Authentic Maranao randang requires “palapa”, a special spice of the Maranaos, but if you can’t find it in your locality, you can use the white part of the green onion. Though fresh “palapa” has a special flavor, green onions will do. Just never skip the shredded & toasted coconut. This is what makes randang a randang. 😀
In the video I forgot to mention brown sugar. Just add half teaspoon when you add the toasted coconut.
