Step by step process of taking maple sap from the trees and turning it into delicious maple syrup. It takes 44 gallons of sap to make 1 gallon of syrup. The process of turning the sap into syrup requires heating the sap to evaporate most of the water and concentrate the sugars. During this heating process the sugars caramelize contributing to flavor and color development.
