Italian Molasses Cookies • Sweet Nostalgia Mostaccioli Recipe

Описание: These cookies, inspired by traditional Italian Mostaccioli cookies, combine the rich flavors of molasses, cinnamon, and cloves with a delightful hint of lemons and orange. Perfect for sharing with family and friends or enjoying as a comforting treat with a cup of espresso, these cookies are sure to become a new favorite in your recipe collection.

INGREDIENTS:
• Eggs: 2
• Sugar: 2 oz
• Sunflower oil: 6 oz
• Molasses: 1 cup
• Vanilla extract: 1 tsp.
• Milk: 1 cup
• Baking soda: 1 tbsp.
• Cinnamon: 2 tsp.
• Ground cloves: ½ tsp
• Cocoa powder: 2 tbsp.
• Orange peel: zest of 1 orange
• Lemon peel: zest of 1 lemon
• Flour: 5 ½ cups
• Almonds: 1 cup, roasted & chopped

Optional Lemon Icing:
• Icing sugar
• Lemon juice


DIRECTIONS:
--- 1. Prepare the Batter: ---
In a large mixing bowl, beat 2 eggs and sugar until well combined.
Add the oil and beat for one minute.
Add in the molasses - mix.
Add in the milk, baking soda & vanilla extract - mix.
Add in the cocoa powder, ground cloves, cinnamon & orange/lemon zest - mix.
Start gradually adding in the flour, mixing well in between; this helps ensure no lumps.
Before mixing in all the flour, add in the crushed almonds and continue adding in the rest of flour. Save some of the almonds for the final topping (optional).
This is a good time to pre-heat your oven to 350°.
Mix in all flour until very well combined and you have a nice consistent batter.

--- 2. Get the Cookies Ready to Bake: ---
Line 2 baking sheets with parchment paper.
Using a large spoon, drop portions of the batter onto the prepared baking sheets, spacing them evenly. Watch how Nonna does it!
Top with Almonds (Optional): sprinkle the chopped roasted almonds over the top of each cookie portion.

--- 3. Bake: ---
Place the baking sheets in the preheated oven and bake for approximately 15 minutes.

--- 4. Optional Icing: ---
For an extra touch, mix icing sugar with lemon juice to make a taste icing.
Start with ¼ cup of icing sugar mixing in fresh lemon juice until desired consistency is reached.
Drizzle the glaze over the cooled cookies for a zesty finish.

--- 5. Cool and Serve: ---
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Serve and enjoy these delightful, flavorful cookies!
