Don't forget as with all recipes YOU have to taste along the way of cooking - all Thai recipes especially are SALTY, SOUR, SWEET these may need adjusting to your own tastes. We can throw chilli heat into the mix as well. Use as many chillies as you feel you are ok with. All recipes are full working recipes and as a base they are great - tailor to your own taste. Hope you enjoy cooking as much as i do.


Green Curry – Chicken

1 tsp Sea Salt
2 tbsp Basil leaves chopped
2 bottom pieces Lemon grass sliced
1 tsp Kaffir lime peel
3-4 Coriander root
1 tbsp Galangal
7-8 Garlic cloves
1 tbsp Coriander seed - Pan roasted
Big chillies for colour
Small chillies for heat – adjust to your taste
Few - Kaffir lime leaves
2 Sliced red chillies
Good handful Basil leaves to serve
½ tbsp Shrimp paste
100g Egg plant
300g - 2 Chicken breasts think sliced
1 tbsp Fish sauce
1 ½ tbsp Palm sugar

NOTE: I DO NOT USE CUMIN SEEDS IN GREEN CURRY
