New York Cheesecake | zero cracks | beginner friendly | gluten free
Ingredients::
For the cheesecake
Lotus biscoff biscuits- 8
Melted butter (unsalted) 60g
Creamcheese 400g
Fine Sugar 80g
Eggs (medium sized) 2
Unsweetened Yogurt 100ml
Vanilla extract 1 tsp
For the Strawberry Sauce::
Fresh or frozen strawberries 200g
Sugar 60g
(Use 1/4 tsp pectin or 1 tsp cornstarch with 1 tbsp water to thicken the sauce )
Method ::
Crush biscoff biscuits add Melted butter mix and bake in a preheated oven at 330F/170C for 10 minutes
Whisk the creamcheese with sugar until smooth
Add 1 egg at a time and whisk at low speed
Mix in the yogurt and vanilla sieve the batter and put it in a water bath with hot water and bake at 325F/160C
for 45 minutes
Allow the cheesecake to cool in the oven
Once cool put it in the fridge for 4 hours
To prepare the Strawberry Sauce wash and cut strawberries add sugar and cook on medium heat till it thickens
Pro tip whisk in the eggs at very low speed in order to avoid cracks
** air bubbles causes cracks so please burst all the air bubbles before baking
*** turn the oven off once you see slightly brown edges and a bit jiggly center
**** can be stored upto 1 month in the freezer so please don't pour the sauce on the entire cheesecake
***** pack the slices in airtight container put it in the freezer let it come to room temperature before serving (if you're going to eat it slowly)
