Jeremy Yelle (b. 2000) is an up-and-coming knifemaker out of Quebec, Canada. His current focus is high performance kitchen knives, bowie knives, and hunting knives. He received his journeyman smith award in 2022. His work is exceptional, and he is clearly a maker to keep an eye on. Lately, he has been working on some high-performance chef's knives, and the results are wonderful!
This chef's knife is a perfect choice as a primary knife in the kitchen. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with just enough finger clearance over a cutting board.
The blade is forged from Jeremy's own san mai. The high performance 80CrV2 carbon steel core is surrounded by 416 stainless steel for easier care. Thin nickel spacers set between the carbon and stainless steels limit carbon migration and make a particularly dramatic transition. The spine and choil are rounded for comfort. We recommend using camellia oil to protect the blade and wood handle.
The Japanese-inspired handle is an ambidextrous octagonal shape hand contoured from stabilized batik mango wood. The rare wood used is a figured variety of sustainable mango wood (Mangifera indica) known for its unique, intricate patterns resembling traditional textile batik, with lighter areas separated by darker borders. It's prized for its density, strength, and beautiful figure. The front of the handle is sealed with a black G-10 bolster. Like other knives, this knife should not be put in the dishwasher.
