Honey Cakes Without Rolling
INGREDIENTS:
Butter 160g
Honey 180g
Baking powder 10g
Eggs 3
Sugar 130g
Salt 1 pinch
Flour ~230g
For the frosting:
Icing sugar 70g (adjust to taste)
33% cream 200 ml
20% sour cream 200g
There will be a lot of frosting, so spread it generously; the cake layers will absorb it all.
DIRECTIONS:
Melt the butter and honey in a saucepan over medium heat. Add the baking powder and stir vigorously until the mixture turns amber. Remove from heat and stir. Let cool.
In a bowl, beat the eggs and sugar until fluffy, about 5-7 minutes.
Pour the cooled honey mixture into the mixture in a thin stream. Add the flour, and the dough is ready.
Spread the mixture on a baking sheet and bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 10-12 minutes. Until set.
Let it cool. Then cut it; I also trimmed the edges for topping.
Paste the edges with a blender until crumbly.
For the frosting, in a bowl, beat the cold heavy cream, sour cream, and powdered sugar until stiff peaks form.
Next, assemble the cake: cake layer, frosting, cake layer, frosting. Decorate with sprinkles and berries (optional).
Refrigerate the finished cake for two hours to soak.
Cut into squares and decorate.
