This is just an unboxing and first test of the Cube 750 Gelato, Ice Cream Machine. I go through the process of making the Vanilla ice cream using a sauce anglaise/custard base. Note, you can use just milk, eggs, sugar and vanilla for the custard base.
Ingredients are as follows:
330g Full Fat Milk
270g Elmlea Double Cream Alternative
90g Granulated Sugar
45g Dextrose
54g 3x Egg Yolks
1/3rd Teaspoon Vanilla Bean Paste
1/10th Teaspoon Guar Gum
1/10th Teaspoon Xanthan Gum
Pinch of Salt.
The ice cream came out really well and it only took around 15 minutes plus prechill time. I had the machine chilling for 3-4 minutes before adding the base mixture so altogether it took less than 20 minutes. It was super smooth, rich and decadent when it came out of the machine. I put it in the freezer set at around -20, -25 Celsius for about 30 minutes before serving in this video. A few hours later I tried it again from my other freezer which I have set at around -14 Celsius and the ice cream was scoopable straight from the freezer.
I will say that next time I will go with double the milk to cream and see how that works out as the fat content was a little high. I will also try 'proper' double cream and see how I get on with that. I'll mess around with the basic recipe and then try some other flavours to see how they turn out. I do have another cheaper ice cream machine, the KUMIO Ice Cream Maker and while the results are decent from it, this Cube 750 machine blows it away and is on a whole new level. It's super quick, super smooth and well worth the money!
