Ingredients:
1 pound of Chinese or Japanese eggplan
Cooking Steps:
Prepare the Eggplant:
Wash the eggplants thoroughly.
Cut off the ends, then slice them into sections about four inches long.
Cut each section in half lengthwise.
Soak the Eggplant:
In a bowl of water, add some white vinegar.
Place the eggplant pieces into the water, making sure they're fully submerged. You can place a plate on top to keep them down.
Let them soak for ten minutes.
Steam the Eggplant:
Fill the steamer with plenty of water and bring it to a boil.
Place the steamer basket on top, and put the eggplant directly into the basket. Do not use a plate.
Steam on high heat for eight minutes.
Check if the eggplant is done by inserting a chopstick; it should go through easily.
Let the eggplant cool down.
Prepare the Sauce:
In a bowl, add 1 tablespoon of minced garlic, 1 tablespoon of chopped green onions, 1/2 tablespoon of black sesame seeds, and chopped chili peppers (optional).
Pour hot oil over these ingredients to release their aroma. Stir well.
Add 1/2 tablespoon of sugar, 1 1/2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 teaspoon of oyster sauce, and 1 teaspoon of sesame oil. Mix everything together well.
Combine and Serve:
Tear the cooled eggplant into bite-sized pieces.
Drizzle the prepared sauce over the eggplant.
Mix well before serving.
