TIBETAN MOMO SOUP// MOKTHUK 🥟
I’ve made a version of these before in the lockdown and it was a HIT! Y’all have to try it!
After some research I found Mokthuk, a momo soup and it was PERFECT to satisfy my cravings! So so gooood! This is my take on it! Hope you like it!
Dough (makes 20)- mix together 1 3/4 cup maida/plain flour + salt + water (little over 1/2 cup) and form a dough. Once a rough dough forms, add 1 tsp oil and knead till smooth. Cover and rest for 30 mins.
Filling - heat oil in a pan, add 2 1/2 tsp garlic, 1 1/2 tsp grated ginger, and 3 spring onion whites. Add 1 1/2 cup grated cabbage, 3/4 cup carrot, 3 tbsp chopped green capsicum, salt and pepper, 1/4 tsp momo masala if you have! . Sauté and then add 1/4 cup silken tofu. Finish off with 1 tsp light soy sauce and spring onion greens.
Divide the dough into balls and roll them out, making sure the edges are thinner than the middle. Shape your dumplings however you want and keep them aside.
Heat vegetable stock in a pot. If you don’t have it, you can use veggie stock cube or bullion powder. Once boiling, add the momos to it and boil for 5-7 mins or till done. Right before they are done, add chopped spinach and boil for 2 mins.
Assembly - in a bowl add chopped garlic, red chillies, sesame seeds, butter, chilli paste, dark soy sauce (1 tsp) rice vinegar (1 tsp) and coriander leaves. Add the hot broth and spinach to it and melt the butter.
Add the cooked momos and serve HOT !
