Keto/Gluten Free Wedding Cake with Keto Gum Paste Recipe- Part 2

Описание: Just like everything else, keto gum paste seemed easy. I tested the black and it turned out great, made an ok rose, then made the red and all seemed good until I went to shoot the final video and it was entirely too soft and I was out of powdered sweetener! So back to testing, ended up needing to add a crap ton more sweetener! Then it ended up being pink instead of red, so I mixed the pink with some black gum paste and got the dark red again, yay! What a rollercoaster these videos have been. Now prepping to re-shoot the final video because I am a perfectionist and literally everything went wrong in the last video shoot!

Black Gum Paste Ingredients

120g Powdered Sweetener
2 Egg Whites (60g)
9g Cellulose Gum (CMC 1 Tbs.)
30g Black Cocoa Powder (about 4 Tbs.)
30g Powdered Sweetener
13g Avocado Oil (1 Tbs.)
Arrowroot Powder to roll
Coconut oil or Vegetable Shortening to smooth dough to roll out

Red Gum Paste Ingredients

120g Powdered Sweetener
2 Egg Whites (60g)
9g Cellulose Gum (CMC 1 Tbs.)
30g Beet Powder (6 scoops)
150g Powdered Sweetener (plus 40-55g more to get right consistency)
13g Avocado Oil (1 Tbs.)
Arrowroot Powder to roll
Coconut oil or Vegetable Shortening to smooth dough to roll out
