Recipe :
8 pakore wale mirchi, slit and deseeded
4 potatoes, boiled and mashed
2 tbsp ghee
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp fennel seeds
1/2 tsp Turmeric powder
1 tsp red chilli powder
1/2 tbsp ginger garlic paste
2 tsp green chilli paste
1/2 tsp hing
1 tsp garam masala
Salt as per taste
1 tsp amchur powder
1/2 tsp Kasturi methi
1 tbsp coriander, chopped
1 onion, chopped
1/4 cup cheese, grated
For the batter:
1 cup besan
1 tsp ajwain
Salt as per taste
1/2 tsp baking soda
Water as required
Oil to deep fry
Method:
To make the batter, mix all the ingredients mentioned together till you get the desired consistency.
In a saucepan, dry roast coriander seeds, cumin seeds and fennel seeds till fragrant. Cool them and pound them into powder.
In another saucepan, add ghee and add all the powdered spices along with ginger garlic paste and chilli paste. Cook it till the raw smell of the paste is gone.
Add the potatoes, coriander and onion. Cook the potatoes well and take it off the heat.
Mix the cheese with potatoes and the filling is ready.
Stuff the filling inside the mirchi. Coat the stuffed mirchi in plain besan and then drench it in the pakora batter.
Heat oil to deep fry the pakoras.
Once the pakora is golden brown in colour, remove and serve hot with mint chutney.
