Easy Pork Menudo Recipe | How to Cook Pork Menudo

Ingredients
2 pounds boneless pork loin chopped
2 medium carrots chopped
1 medium potato chopped
1 medium red bell pepper chopped
6 pieces hotdog sliced
½ tsp salt
½ tsp ground black pepper
2 medium onion
1 bulb garlic
4 medium tomatoes chopped
1 tbsp soy sauce
2 tbsp oyster sauce
8 oz tomato sauce
3 cups water
2 pieces dried bay leaves
½ cup raisins

Instructions
1. Heat 2 tablespoons of olive oil in a wok over medium heat.
2. Add chopped carrots and potatoes. Stir and cook for about 3 minutes.
3. Toss in sliced hotdogs and chopped red bell pepper. Stir and cook for another 3 minutes. Remove the mixture from the wok and set aside.
4. In the same wok, heat 2 more tablespoons of olive oil. Add minced garlic and diced onion. Sauté for about 3 minutes.
5. Add chopped tomatoes. Stir and cook for 3 minutes.
6. Stir in chopped pork loin. Cook for 10 minutes, seasoning with salt and pepper.
7. Add 2 tablespoons oyster sauce, 1 tablespoon soy sauce, 8 oz. tomato sauce, 2 broken dried bay leaves, and 3 cups of water. Stir well, cover, and cook for 35 minutes until the pork is tender.
8. Uncover and stir in the cooked vegetables and hotdog mixture. Add 1/2 cup raisins and stir for 2 minutes. Turn off the heat.
9. Serve hot with steamed rice and enjoy!
