Well we expected a June cloud seeding Rain in #mydubai it didn’t happen so we made some evening snack and enjoying our scorching 50C summer 😅
Elanji is a Kerala Malabar crepe stuffed with sweet coconut.
For crepe Batter
All purpose flour (maida)- 1 cup
Sugar -2 tbs
Turmeric -1/4 tsp
Salt -1 tsp
Egg-1
Water to mix to a loose batter
Mix into a loose crepe batter , to a pan pour batter to make thin crepes and cook both sides and keep aside .
For stuffing
Ghee -2 tbs
Cashew nuts -3 tbs crushed
Raisins-1 tbs
Cardamom-1/2 tsp
Sugar -4 tbs (more or less )
Coconut -1 cup
In ghee sauté nuts , coconut , sugar , cardamom to make a sweet filling .
Stuff the sweet coconut filling in the crepes and enjoy 🙌🏻
