Kottayam Style Boti Fry
Ingredients
Beef intestine(Boti)
Add Garlic 2 Tbsp
Sliced ginger 2 Tbsp
Medium size sliced onion 4
Green chilies 4-5
Some curry leaves
Turmeric powder 1/4 tsp
Pepper powder 3.5 tsp
Garam masala 2.5 tsp
Coriander powder 4 tsp
Red chili powder 4 tsp
And Salt to taste
Garam masala 1 tsp
Sliced medium size onion 1
Coconut oil
Method
If you are buying uncleaned intestine, clean the intestine(boti) in running water. then dip in boiled water and clean by peeling off the skin with the help of a knife until its get white in color then
Take enough water and add 3-4 tbsp of vinegar. keep the intestine (boti) in this water for 10 minutes then Clean the potti in tap water multiple times (Minimum 7-8 times) and Slice it into small pieces.
For marinating the boti
Add Garlic 1.5 Tbsp
Sliced ginger 1.5 Tbsp
Medium size sliced onion 3
Green chilies 4-5
Some curry leaves
Turmeric powder 1/4 tsp
Pepper powder 1 tsp
Garam masala 1.5 tsp
Coriander powder 3 tsp
Red chili powder 3 tsp
And Salt to taste
Also if you want you can add some oil. Mix well and keep aside for 30minuts then cook well.
Heat some coconut oil in a pan then splutter mustard
Add garlic 1/2 tbsp, sliced ginger 1/2 tbsp saute well
Add Some curry leaves
Add 10 sliced shallots then saute well until it's a golden brown color
Next, add cooked meat and mix well then cook on high flame until it's dry.
Now the gravy becomes dry. Next, we need to add some ingredients.
Add Red chili powder 2 tbsp
Coriander powder 2 tbsp
Pepper powder 1 tsp
Garam masala 1 tsp
Sliced medium size onion 1 Then mix well
Once it did reduce the heat and cook on low flame until it becomes dry. keep stir it every 5-6 minutes. Add 2-3 tbsp of coconut oil in-between until it is done.
Once it 50% done add 2-3 tbsp of coconut oil and mix well.
Repeat this process every 15 minutes until it's completely dry.
Now it's 90% done. we cooked it for around 1.45 hours.
next, add
2-3tbsp of coconut oil
some curry leaves
check the salt add if needed, garam masala 2 tsp
pepper powder 1.5 tsp then mix well.
cover and cook again it for 5 minutes then off the flame
