One Pot Chicken Biryani recipe
📝 Ingredients:
Chicken
Basmati Rice
Onion, Tomato, Curd
Ginger-Garlic Paste
Biryani Masala & Spices
🍳 Instructions:
1. Marinate the chicken:
Mix all marinade ingredients.
Add cleaned chicken and coat well.
Cover and refrigerate for at least 1 hour (preferably 2–3 hours).
2. Prepare the chicken gravy:
Heat oil in a big deep vessel (handi or pressure cooker without lid).
Add whole spices (bay leaf, cardamom, cloves, cinnamon) and let them sizzle.
Add sliced onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté till raw smell goes.
Add chopped tomatoes and cook until they soften.
Add turmeric, red chili powder, biryani masala, and salt. Mix well.
Add marinated chicken pieces and fry for 3-4 minutes.
Add curd, mint, and coriander. Mix and cook for 5-7 minutes until chicken is half done.
3. Add rice and water:
Drain soaked rice and add to the chicken mixture.
Add 4 cups of water (double the quantity of rice).
Adjust salt. Stir gently.
4. Cook together (boiling method):
Bring the mixture to a boil on high flame.
Once boiling, reduce to low flame.
Cover with a tight lid and cook for 15-20 minutes until rice and chicken are fully cooked and water is absorbed.
Switch off heat and rest for 10 minutes.
5. Fluff and serve:
Gently fluff the rice using a fork.
Serve hot with raita, pickle, or boiled eggs.
✅ Tips:
You can add saffron milk or food color on top just before covering, for biryani look.
Use a thick-bottomed vessel to avoid burning at the base.
Don’t stir too much after adding rice — it may break the grains.
Classic Onion Raita (प्याज का रायता)
📝 Ingredients:
Curd (thick yogurt) – 1 cup
Onion – 1 small, finely chopped
Green chili – 1 (optional, finely chopped)
Coriander leaves – 1 tbsp (chopped)
Cumin powder (roasted) – ½ tsp
Salt – to taste
👩🍳 Instructions:
Whisk the curd until smooth.
Add chopped onion, green chili, and coriander.
Mix in roasted cumin powder and salt.
Serve chilled with biryani.
