In most cases, boneless fish does not mean genetically modified fish. It usually refers to mechanically deboned fish, selective breeding with fewer bones, or fish processed using advanced bone-removal techniques for ready-to-eat products. While this improves ease of eating, excessive processing can reduce nutritional value, add preservatives, or increase sodium content in packaged versions.
The key concern is not the absence of bones, but how processed the final product is. Fresh, minimally processed fish — even with bones — often provides better nutrition, including calcium and collagen from small edible bones.
