French Rum Baba Cake
French babas recipe will be prepared in three steps:
1st step: babas cake
2nd step: sugar syrup
3rd step: whipped cream
المكونات:
180جم (1 1/2 كوب) دقيق
لجميع الأستعمالات منخول
100جم زبدة غير مملحة،
بدرجة حرارة الغرفة.
3 بيضات بدرجة حرارة الغرفة
125 مل (1/2 كوب) حليب دافئ
6 جم (1 ملعقة صغيرة) خميرة
4 جم (1 ملعقة صغيرة) سكر
5 جم (1 ملعقة صغيرة) خلاصة الفانيليا
2 جم (1 ملعقة صغيرة) بشر البرتقال
رشة ملح.
Ingredients
180g (1 1/2 cups) all-purpose flour, sifted
100g unsalted butter, room temperature.
3 eggs room temperature.
125 ml (1/2 cup) warm milk
6g (1teaspoons) yeast.
4g (1 teaspoon) sugar.
5g (1 teaspoon) vanilla extract.
2g (1 teaspoon ) Orange Zest
Pinch of salt.
1st step: spongy cake
Instructions:
1. In a warm milk cup add yeast and sugar and mix until combined, Let stand until foamy, 5 to 10 minutes
2. In a stand mixer bowl, add flour, salt, eggs, vanilla, Orange Zest and mix for 5 minutes.
3. Add yeast mixture then mix until all are very well combined.
4. Add butter and beat until batter is smooth, about 2 minutes.
5. Make sure to scrape the bottom and the sides of your mixer bowl. Cover loosely with plastic wrap and let it set for 60 minutes in a warm place until doubled in volume.
الخطوة الثانية: الشربات أو شراب السكر
المكونات:
2 كوب ماء
1 1/2 كوب سكر
1 ملعقة كبيرة عصير ليمون
1 ملعقة كبيرة فانيليا
شرائح البرتقال
2nd step: Make the sugar syrup
Ingredients:
2 cup water.
1 1/2 cup sugar.
1 tablespoon lemon juice.
1 tablespoon vanilla extract.

Instructions: : Make the sugar syrup
1. In a medium saucepan, combine sugar and water, over medium-high heat until sugar dissolves and bring to a boil.
2. Place lemon juice, vanilla and orange slices, turn the heat down to medium low and simmer for 10 minutes.
3. Remove from heat and set aside and discard solids.
• After 1 hour & 30 minutes, the dough doubled in size
• Grease and flour the cake moulds
• Add the batter in a piping bag, and then pour in bottom of cake molds
• Cover with plastic wrap and Leave them to rise again in a warm place, until the dough grows into the mould and forms a dome on top, about 30-45 minutes
الخطوة الثالثة: تحضير الكريمة المخفوقة:
المكونات:
1 كوب كريمة خفق
1 ملعقة كبيرة سكر بودرة
1 ملعقة صغيرة فانيليا
3rd step: make the whipped cream:
Ingredients:
1 cup heavy whipping cream.
1tablespoon powdered sugar.
1teaspoon vanilla extract.
Instructions: make the whipped cream:
1. In a stand mixer fitted with the whisk attachment, add whipping cream, powdered sugar and vanilla, Start blending until the cream forms stiff peaks
2. Set in fridge until use
Baking:
1. Preheat the oven to 180°C
2. Small cake molds 10-15 minutes
3. Medium cake molds 15-18 cake minutes
4. Or bake until a toothpick comes out clean.
5. Remove and allow cooling in their molds for about 10 minutes. Turn the cakes out of the molds and place them on a rack to cool
• Dip each baba in the hot syrup on both sides then place over a cooling rack to drip excess syrup.
• Cut baba in half and fill the middle with whipped cream and fresh fruits.
• Cover the baba with the second half, decorate with whipped cream and arrange fruits on top.
• Refrigerate babas before serving for 3 hours
