Recipe:
1 lb. ground beef
1 lb. ground pork
1 medium white onion, diced
2 carrots, peeled and diced
2 stalks celery, diced
5 cloves of garlic, minced
2 tbs. tomato paste
1 bay leaf
1 tbs. crushed red pepper flakes
1 cup white wine
1 cup chicken stock
1 28oz. can of crushed tomatoes
salt and pepper to taste
30 minutes before serving:
1/2 cup half and half or heavy cream
1 tsp. ground nutmeg
1. Add onion, carrot, and celery to large skillet or stock pot with 2 tbs. of neutral oil. Cook at med high heat until they start to soften.
2. Add garlic and sauté for 1-2 minutes until fragrant.
3. Add tomato paste and cook for 1-2 minutes
4. Add white wine to deglaze the pan and simmer for 4-5 minutes.
5. Add chicken stock bring to simmer
6. Add meat and cook until it starts to brown.
7. Add salt and pepper to taste, about 2 tsp. of each. You can add more at end if it needs it.
8. Add red pepper flakes, crushed tomato, and bay leaf
9. Bring to hard simmer and turn to low for 2-3 hours if possible.
10. 30 minutes before serving, add half and half and nutmeg.
Goes great with a larger pasta like pappardelle or rigatoni. I prefer to add pasta and sauce into a sauce pan to combine. Enjoy!
