South Nawabi style Biryani
Biryani gravy making
1. Ground nut oil: 3 pit spoon (150 ml)
2. Ghee: 1 pit spoon (50 ml)
3. Cloves -5 Nos Whole
4. Cardamom - 4 Nos Whole
5. Cinnamon - 2-inch Whole
6. Big onion: 2 nos. (150g)- fry translucent
7. Ginger Garlic paste: 200 grams
8. Tomato: 2 nos. (150 gram) Sliced
9. Turmeric powder: half tbsp
10. Red chilli powder:1 tbsp
11. Biryani masala powder: 1 tbsp
12. Curd: 100 ml
13. Mutton: 1Kg
14. Mint leaves :1 handful (10g)
15. Coriander leaves: 1 handful (10g)
16. Green chilies: 3 Nos.
17. Lemon: 1Nos
18. Salt- 2 tbsp (30g)
19. Water: 500ml
20. Big onion:2 nos. (150g)-Sliced added raw.
21. Close lid and cook mutton in low flame for 1 hour
Rice Making
1. 1 kg Extra-long XXXL Basmati rice soaked for 60 minutes.
2. Boil 4 litres of water (4 times the rice)
3. Add 4 tbsp salt (50g).
4. Turmeric powder -half tbsp (10g)
5. Boil the Rice in the water for 8 minutes, use timer in mobile for exact time tracking
6. Add parboiled rice over masala mutton in 3 layers,
7. 1st layer 8 mins boiled rice.
8. 2nd layer 9 mins boiled rice.
9. 3rd layer 10 mins boiled rice.
10. Close the lid and keep the rice boiled hot water on top.
11. Keep in dum with lowest possible flame for 15 minutes.
12. Throttle Gas inlet valve to get the lowest flame in the gas stove burner.
13. Dum cook - 15 minutes low flame
