🥟 Soup Dumpling Recipe (小笼包) 🍜
"Steamy, juicy, and bursting with flavor — here’s how to make those soup-filled dumplings that break the internet."
🔥 INGREDIENTS
🥣 For the Soup Gelatin :
1 lb pork skin or pork bones
6 cups water
2 slices ginger
2 green onions
Splash of Shaoxing wine
Salt to taste
🥟 For the Filling:
1 lb ground pork (80/20 fat ratio ideal)
2 tsp soy sauce
1 tsp sesame oil
1 tbsp Shaoxing wine
½ tsp sugar
½ tsp white pepper
½ tsp grated ginger
1 cup finely chopped aspic (from above, chilled & diced)
🌾 For the Dough:
2 cups all-purpose flour
¾ cup warm water
👩🍳 STEP-BY-STEP:
1. Make the Soup Aspic (Gelatin):
Boil pork skin/bones with aromatics for 2–3 hours → strain → chill until set. This becomes your “soup” inside the dumplings when it melts during steaming. 🔥
2. Make the Dough:
Mix flour + warm water → knead for 10 minutes → cover and rest 30 minutes → divide and roll into thin wrappers (about 3-inch rounds).
3. Make the Filling:
Mix pork with all seasonings → fold in diced aspic cubes.
4. Assemble Dumplings:
Scoop 1 tbsp of filling → fold with 12–18 pleats per dumpling (practice makes perfect!) → seal tightly.
5. Steam to Perfection:
Steam on parchment or cabbage leaves over boiling water for 8–10 mins. Don’t peek!

Place on spoon → bite top → slurp soup → dip in black vinegar + ginger → devour. 😋
